  1. In a large skillet (preferably cast iron), Heat butter on medium heat. You need to add the onion and cook a few minutes, until translucent.

  2. Then, mix in the chopped corned beef and potatoes and spread out evenly over the pan. Try to increase the heat to high and press down on the mixture with a metal spatula.

  3. You should cook until browned, then flip: Be careful! You shouldn’t stir the potatoes and corned beef, but let them brown.

  4. To peek underneath, use a metal spatula and see if they are browning. When nicely browned, use the spatula to flip sections over in the pan so that they brown on the other side. Again, press down again with the spatula.

  5. Try to cook in this manner until the potatoes and the corned beef is nicely browned.

  6. Finally, remove from heat, you can serve the hash with the eggs and garnish with chives. Enjoy it!
