You can use leftover chicken, and cook some brown or white rice, and sauté some veggies (bell pepper, mushrooms, zucchini, broccoli).

While vegetables are about done cooking, add in the meat to warm up and add taco seasoning or teriyaki sauce depending on the flavor you want. Finally, put the veggies and meat on top of the rice and your done. You can add some cheese or sour cream on top also.
